Easy Peasy Oatmeal Cinnamon Pancake

Well, the answer to your Quick Fix Breakfast is here!! Oatmeal Cinnamon Whole Wheat Pancake! tadaaaa..

Ok that sounded like a bad copy of a worse advertisement.. errr..

Without wasting much time, this will be a super quick post, just so that Marathon Bloggers don’t kill me for not doing a post this week *ducks* So Pancakes are the easiest thing one can make. There is no measuring cup required, no elaborate preparation. Literally, just throw things together, mix it and you are done! And the best part is, there are so many varieties of a pancake, it is absolutely mind-boggling! So here is my healthy, powerful, egg-less, will-keep-you-stuffed-till-noon variety of Pancake:

Oatmeal Cinnamon Whole Wheat Pancake

Prep time: 10 mins
Cook time: 10 mins

Additional time: 5 mins to make that amazing Cold Coffee to go with it!! 😉

Ingredients:

  1. Whole Wheat Flour (atta) – 1 cup
  2. Rolled Oats (Quaker brand or any other) – 1 cup
  3. Sugar – 1 tsp oR  Splenda – 1 tsp
  4. Cinnamon Powder – as much as you desire..
  5. Milk – 1 cup
  6. half a lemon
  7. Salt – 3/4 tsp
  8. Vanilla extract – just a bit

Method:

  • Warm the Milk just a tad bit and add the lemon juice to it. Curdled milk adds a fluffiness and a unique taste to the pancake
  • Now take a big bowl, add the whole wheat flour, oats, sugar, cinnamon power and salt to it
  • Make a little well in the middle by pushing the dry ingredients to the sides of the bowl
  • Add the curdled milk to this bowl and start mixing
  • The consistency is slightly thick. Not too runny and not too stiff
  • Add the Vanilla essence to the mix
  • Now heat a nonstick pan and add a drop of olive oil to it
  • Once heated, take a ladle full of the mix, pour it on the pan and spread it evenly
  • The size of the pancake can be what you desire…
  • Once tiny bubbles start appearing at the top of the pancake, you will know it is done and flip it over
  • The pancake will be ready within a minute of flipping
  • On the plate, stack up the pancakes, drizzle generously with honey/maple syrup. Cut up slices of orange and add it to the top
  • Voila! You can now dig in!!!

Tips:

  • Topping: Nutella, chocolate sauce, strawberries, bananas, apples or blueberries – you may add whatever you may desire… one of the many wonders of a truly flexible Pancake!!
  • Instead of curdled milk, you can add 1 and 1/2 cup of Buttermilk too.. tastes just as fabulous!
